After keeping in stainless steel this was transferred to two old oak casks for fermentation, followed by brief maturation in steel and bottling. Rich and lusciously sweet this has aromas of dried fruit and poached pear, with pear skin tannins on the tongue and brown sugar. Pairs well with desserts,
